Quesadilla on a wooden table

Does your family love Mexican food, and more importantly, quesadillas? Are you always looking for ways to make them more sustainable? What better way than to use ingredients that you may already have in the fridge to save you a trip to the grocery store? This quesadilla recipe can be made in a quick 15 minutes for the entire family to enjoy.

Ingredients

  • 1 cup cooked diced chicken (check your fridge for leftovers!)
  • ½ teaspoon ground black pepper
  • 1 teaspoon sea salt
  • ½ cup cooked corn kernels
  • 1 cup barbecue sauce
  • 2 cups shredded cheddar cheese
  • 8 small tortillas
  • Sour cream (optional)

Instructions

  1. First, you are going to scour your fridge for the leftover chicken to ensure it does not go to waste! Once you have spotted it you are then going to cut the chicken into small pieces.
  2. Season the chicken with sea salt and pepper. This is important when it comes to flavor!
  3. In a small saucepan, heat the chicken with the BBQ sauce and add in the corn. You will then set that mixture aside.
  4. Place tortillas, one or two at a time, on a hot griddle or pan. Spread some cheese (pick your favorite because why not?) and some of the chicken mixture over each tortilla.
  5. Top with another tortilla, and carefully flip the quesadillas to brown both sides of the quesadillas. This part can be difficult so be sure you are taking safety precautions.
  6. Remove from heat when cheese is melted, and both sides are brown and slightly crisp.
  7. Cut into triangles and top with a dollop of sour cream.
  8. Serve with additional barbecue sauce if desired.

A Few Extra Tips
