- 1 cup cooked diced chicken (check your fridge for leftovers!)
- ½ teaspoon ground black pepper
- 1 teaspoon sea salt
- ½ cup cooked corn kernels
- 1 cup barbecue sauce
- 2 cups shredded cheddar cheese
- 8 small tortillas
- Sour cream (optional)
- First, you are going to scour your fridge for the leftover chicken to ensure it does not go to waste! Once you have spotted it you are then going to cut the chicken into small pieces.
- Season the chicken with sea salt and pepper. This is important when it comes to flavor!
- In a small saucepan, heat the chicken with the BBQ sauce and add in the corn. You will then set that mixture aside.

- Cut into triangles and top with a dollop of sour cream.
- Serve with additional barbecue sauce if desired.
